Claysville Store and Cafe After enjoying the fine food, I called Mark Hooibrink for some history of his restaurant and the town of Claysville. Mark, his wife Laura, and three children live close to the store. In 1998 the children began to sell Kool Aid to the users of the KATY trail. Soon sandwiches, Marks' BBQ were added to the fare. Then instead just walkers and bikers, cars began arriving to enjoy the food. The store originally did not have a kitchen, so crock pots were used to keep the food warm. The store added a kitchen and a grand re-opening was held in 2002. Now Mark and Laura are expanding the cafe by adding a 32 foot by 32 foot section which will seat 50. Using metal salvaged from previous changes the new addition will keep the look and feel of the original store.
